Premium Fresh Black Tiger Prawns

Large prawns in the shell, marked with bold dark bands that run across a pale grey-brown body. The tail fan is edged in blue and yellow, the legs and long antennae are intact, and the shell has a hard, glossy shine to it. The flesh underneath is firm and slightly translucent, with a clean grey-white colour.

These are big enough that one or two per person is a generous serve. The shell is thick and holds up to hard heat, which makes them good for the grill or a hot pan: split them down the back and cook them cut-side down so the shell chars slightly and the meat stays juicy. They also poach well, and the heads and shells make an excellent stock.

Keep frozen at -18°C or below. Thaw in the refrigerator and cook thoroughly before eating.
